Chia Seed Pudding Recipe | Realness Challenge Day 16

I like to keep this blog centered mostly around fashion and real talk content, but I just had to share this insane Chia Seed Pudding Recipe with you all!

I was inspired by the most amazing breakfast-in-a-jar that I had while in Puerto Rico. It was a chia seed pudding topped with mango preserves, honey and granola. OMG!

Seriously, my taste buds are salivating just thinking about it. I wanted to try my hand at recreating the chia seed pudding and putting my own little twist on it.

Here’s what you’ll need:

+ Chia Seeds

+ Coconut Milk

+ Cinnamon

+ Pink Himalayan Salt

+ Vanilla Extract (optional)

+ Granola (optional)

+ Fresh Fruit

+ Yogurt of your choice

+ Honey

First… You’ll need to soak the chia seeds in coconut milk. I did this over night. I used 1/4 cup of chia seeds for every 1 cup of coconut milk.

I ended up quadrupling the recipe and making a big batch for the entire week. So, in a large bowl whisk together the chia seeds and coconut milk.

Add in cinnamon, himalayan pink salt and vanilla extract to taste. Keep whisking this all together until it’s combined. Wrap the bowl in saran wrap and leave it in the fridge until the next morning.

It’s seriously so easy! By the next morning your chia pudding should be good to go. Just drop some in a mason jar (or bowl), top it was yogurt and layer on fresh fruit, a little sprinkle of cinnamon and a drizzle of honey!

These are so easy and so delicious.
